Ingredients: 1/4 cup honey 2 tablespoons unsalted butter 1 teaspoon vanilla extract 3 cups rolled oats (not quick cooking oats) 1/4 cup sweetened coconut, shedded 1/2 cup chopped walnuts 1/4 cup blanched sliced almonds 2 tablespoons sunflower seeds, unsalted 2 tablespoons sesame seeds 1 teaspoon ground cinnamon Instructions: Preheat oven to 325 degrees, and spray a sheet pan with non-stick vegetable oil. Combine honey and butter in a sauce pan or in a glass microwaveable container. Heat just until butter melts and stir well to mix; add vanilla and stir. In a mixing bowl, combine the rest of the ingredients and mix well. Pour the liquid over the dry ingredients and mix thoroughly. Spread the mixture on the prepared sheet pan. Bake the granola for a total of 20 to 25 minutes, stirring every 10 minutes. The granola will develop a golden, toasted color, but will burn easily, especially around the edges of the pan. Remove from the oven and let cool completely before serving or storing. After granola has cooled, you can add dried fruit such as cranberries, cherries, blueberries, or raisins. It keeps well at room temperature in an air tight container for up to 1 month. Notes: Serve with milk, or make a breakfast parfait by layering granola with plain or flavored yogurt. |
