Cinnamon Mornings and Chocolate Dreams

Ingredients:
4 cups bread cubes toasted at 350 degrees for 8 min (Hawaiian Sweet Bread optional)
2 cups milk
6 eggs, beaten
1 1/2 cups white sugar
1/4 teaspoon salt
1 1/2 tablespoon cinnamon
1/2 cup raisins (optional)
1 cup fresh papaya puree
1/2 cup diced fresh papaya
2 teaspoon vanilla
1/2 cup sliced almonds or diced pecans (or macadamia nuts if available)

Sauce:
1 cup papaya, diced
1 cup half and half
1/2 cup honey
4 teaspoons lemon juice

Instructions:
Mix bread cubes, milk, eggs, sugar, salt, cinnamon, raisins, puree, diced papaya, vanilla and nuts in baking dish. Place pan of water on bottom shelf of oven (water bath). Bake at 350 for 45 min in pan which has been sprayed with vegetable oil or butter. Pudding is down when knife inserted into center comes out clean. Pudding can be served warm or cold. Prepare Papaya Cream Sauce as follows: Combine 1 cup diced papaya, 1 cup half and half, 1/2 cup honey and 4 teaspoon lemon juice in blender until smooth. Serve on top papaya bread pudding with a dollop of whipped cream (optional, of course!)
