Cinnamon Mornings and Chocolate Dreams

Ingredients:
3 large eggs (sep). Whites at room temp.
3 Tbsp sugar
1 Tbsp rum
Pinch Salt
1/2 cup stick butter, unsalted
1/2 cup strawberry jam
1 tsp. lemon juice
2 Tbsp. sour cream
2 sliced strawberries (for garnish)


Instructions:
Butter 10" skillet or omelet pan. Preheat oven 350 degrees.

Beat yolks, 1 Tbsp sugar and 1 Tbsp of rum. Add pinch of salt to whites, beat 'til frosty. Gradually add 2 Tbsp sugar & beat 'til peaks form. Fold into yolks. Bake 20 minutes.

Prepare Strawberry Butter:

Whip 1/2 cup stick butter. Add strawberry jam and lemon juice. Whip 'til smooth. Refrigerate.

To finish omelet:

Spread butter on half of omelet and fold over. Top with 2 Tbsp strawberry butter, sour cream, and 2 sliced strawberries
