Ingredients: 1 cup frozen O'Brien hash brown potatoes 6 eggs salt and pepper Instructions: Put one Tbsp butter or oil in pan and cook potatoes. Beat eggs with salt and pepper. Pour over potatoes. Cook lifting edges. When almost done, sprinkle with 1/2 cup grated cheddar cheese and put under broiler to cook top. Put on warm plate to serve and garnish with parsley or fresh herbs. Any combination of meats or vegetables can be used in place of the potatoes. For variety, use different cheeses or flavor with fresh or dried herbs, parsley or chives. |
