Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
1 cup all purpose flour
1/4 tsp salt
2 Tbsp maple sugar
1/2 tsp baking soda
1 tsp baking powder
1/2 Tbsp apple pie spice

Sift all dry ingredients together.

4 egg yolks
1 cup buttermilk
1 tsp vanilla extract
4 egg whites
1/2 cup heavy cream

2 apples peeled, cored and sliced 1/4" thick
1 Tbsp butter
2 Tbsp maple syrup

Instructions:
Blend together wet ingredients, then add and mix in dry ingredients. Whip 1/2 cup heavy cream stiff. Fold into batter first. Whip 4 egg whites stiff. Fold into batter next. Finished batter should be light and airy. Do not over mix.

Saute apple slices equally in two oven proof 8" pans with butter for 2 minutes on medium heat. Add Maple syrup and continue to saute until they start to brown. Ladle 1/2 of batter into each oven proof pan. Bake at 400 for 20-30 minutes. Turn out upside down onto serving plates. Sprinkle with powdered sugar.
