Ingredients: 1/2 cup soft butter
1 cup sugar
2 eggs
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 tsp vanilla
2 1/2 cup blueberries
Instructions: Preheat oven to 375 degrees. In a large mixing bowl, cream butter, sugar and eggs. Sift dry ingredients together and add alternately with milk and vanilla to the creamed mixture. Fold berries into the batter and spoon into greased muffin pan. Sprinkle with sugar and bake 30 minutes.
Leave muffins in muffin tin 3-5 minutes after baking and they'll be easier to remove from the pan.
