Cinnamon Mornings and Chocolate Dreams

Yield: 9 servings 

Ingredients:
2 cups all-purpose flour
1 1/2 cups sugar
1 Tbsp baking powder
1 tsp salt
3 Tbsp shortening
5 eggs
1/2 cup butter, melted
8 ounces cream cheese
1 lb confectioners sugar
1 1/2 Tbsp vanilla extract


Instructions:

Preheat the oven to 350 degrees. Combine the flour, sugar, baking powder, and salt and cut in the shortening with a pastry blender or in a food processor until the mixture resembles coarse meal. Mix in 3 of the eggs and the butter and combine well. Spread this batter over the bottom of a greased 9 x 13 inch baking pan.

Combine the cream cheese, the 2 remaining eggs, the sugar (reserving two tablespoons) and the vanilla, and pour this mixture over the batter in the baking pan. Bake the cake for 15 minutes, remove from the oven and sprinkle the reserved sugar over the top. Return the cake to the oven and bake for 35 minutes more. When done, the cake will still be moist in the center. Cool slightly before serving.
