Ingredients: 1/2 cup butter 1 cup sugar 2 eggs 2 medium very ripe bananas, mashed 2 cups flour 1 teaspoon baking soda 1/4 cup chopped pecans 1/4 cup mini chocolate chips 1/3 cup chopped maraschino cherries Instructions: 1. Preheat oven to 350. Butter mini-muffin tins, enough to make 45 muffins. 2. Soften butter, then cream with the sugar. Beat until light and fluffy. 3. Add eggs, one at a time, beating until smooth. 4. Add bananas and beat. 5. Sift soda with flour. Stir gently into creamed mixture. 6. Fold in pecans, chips, and cherries. 7. Pour into buttered mini-muffin tins. 8. Bake 20 minutes. 9. Remove minis from tins and cool on wire rack. 10. ENJOY in joy! |
