Ingredients:
3C Flour
1t Salt
1/8 t Yeast
1 5/8 C water

Instructions:
Mix all ingredients in a bowl, cover and allow to ferment for 8-24 hours.

Preheat heavy covered baking vessel such as cast iron enameled casserole at 450 for 20 minutes

Turn dough onto a generously floured work surface, pull sides up and invert. You should have a semi-shaped round loaf with a gluten cloak.

Drop into pre-heated vessel, cover and bake for 30 minutes. Remove cover and bake an additional 30 minutes.
