Ingredients:
1 stick unsalted butter
3 shallots, finely sliced
2 garlic cloves, minced
Pinch salt and pepper
1 pint heavy cream
1 cup freshly grated parmigiano reggiano
Freshly chopped Italian parsley to garnish

Instructions:
Heat butter in a small sauté pan over medium high heat until melted. Add shallots and sauté a minute or two until they begin to caramelize. Add garlic and heat through a minute or so or until fragrant. Add cream and heat until just beginning to bubble around the edges, but not scorched. Add Parmesan and continue stirring until melted. Season to taste with salt and pepper and serve immediately over fettuccine noodles. Garnish with freshly chopped Italian parsley.
