Ingredients: 1 cup gluten free all purpose flour mix (see below) 2 teaspoons aluminum-free baking powder 1 teaspoon Organic sugar 1/2 cup Organic apple juice 1/4 cup filtered water 1 Tablespoon vegetable oil 2 teaspoons vanilla 2 Tablespoons lemon juice All Purpose Gluten Free Flour Mix (All these ingredients are readily available at grocery stores with Organic food sections) 1 cup brown rice flour 1 1/4 cup white rice flour 1/4 cup potato starch 2/3 cup tapioca starch 3/4 cup sweet rice flour 1/3 cup cornstarch 2 tsp xantham gum Instructions: Pre-heat waffle iron. Mix gluten-free flour mix, baking powder and sugar in bowl. Add apple juice and water gradually, stirring to mix. Add oil and vanilla, then whisk until smooth. Add lemon juice and whisk for one minute. Spray waffle iron with cooking oil. Pour 1/2 cup batter into waffle iron. Cook according to manufacturers directions. Serve immediately with syrup, preserves, berries and whipped cream, etc. |
