Ingredients: 1 1/4 cups quick cooking oatmeal 1 1/4 cups non-fat buttermilk 1 1/4 cups whole wheat flour 1 tbs sugar 1 tbs baking powder 1/4 tsp baking soda 2 1/2 tbs applesauce 2 egg whites 1 tsp vanilla 1 cup chopped fresh strawberries Instructions: Preheat oven to 350 degrees. Coat 12-cup muffin tin with non-stick cooking spray. Combine the oats and buttermilk, stir to mix well and set aside for at least 5 minutes. Combine the flour, sugar, baking powder, and baking soda. Stir to mix well. Add the oat-buttermilk mixture, applesauce, egg whites and vanilla. Stir just until dry ingredients are moistened. Fold in strawberries. Fill muffin cups 3/4 full with batter. Sprinkle 1/4 tsp sugar over the top of each muffin. Bake 17-20 minutes. Remove tin from oven and allow to sit for 5 minutes before removing the muffins. |
