Ingredients: STUFFING: 6 oz. fat free cream cheese 6 oz. fat free yogurt 3 oz. fat free sour cream FRUIT: 1 cup fresh Maine blueberries 1/2 cup frozen raspberries, crushed BATTER: 2 packages 8 oz. Egg Beaters 1 cup skim milk 1 teaspoon vanilla 12 slices whole wheat bread, crusts removed Powdered sugar Maine maple syrup Instructions: In a separate bowl mix stuffing ingredients. In a separate bowl mix batter ingredients. Coat 6 slices whole wheat bread with stuffing and place stuffing side up in large pan. Sprinkle fruit generously on top of stuffing. Coat remaining 6 slices with stuffing and place stuffing side down on top of fruit, making a sandwich. Pour batter over sandwiches and soak for 30 minutes. Cook on grill at medium heat until golden brown, turning several times. Slice diagonally, place on large plate and serve hot with powdered sugar and Maine maple syrup. |
