Yield: 8 servings 

Ingredients:
5 tablespoons butter, separated
2 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 4-ounce can mushrooms, drained
1/2 cup shredded American cheese
1 cup chopped Canadian bacon
1/4 cup chopped green onions
Paprika
1 dozen eggs, beaten
Bread crumbs

Instructions:
Combine 2 tablespoons butter and flour. Blend until smooth. Cook over low heat until bubbly. Gradually stir in milk. Cook until smooth and thick, stirring constantly. Add salt, pepper, and cheese. Heat and stir until cheese melts. Set aside. Saute bacon and onions in remaining butter until onions are tender. Add eggs; cook until set, stirring to scramble. Fold in mushrooms and cheese sauce. Spoon egg mixture into lightly greased 12-by-7 inch baking dish. Top with bread crumbs; sprinkle with paprika. Bake at 350 degrees for 30 minutes.
