Ingredients: Brought to you by the Lake Travis B&B Austin, TX Sail-Away Souffle A cross between a souffle and a blintz, this breakfast is a great way to start any adventurous day. It is made the night before, so you can greet the winds early. 8 ounces cream cheese, softened 1 cup cottage cheese 2 egg yolks 1 T granulated sugar 1 t vanilla extract 6 eggs 1 1/2 cups sour cream 1/2 cup orange juice 1/3 cup granulated sugar 1 cup butter or margarine, melted 2 t baking powder 1cup flour Blueberry pie filling and /or fresh blueberries, as a topping In a mixing bowl, beat together the cream cheese, cottage cheese, egg yolks, sugar and vanilla. Set aside. In a blender, puree the eggs, sour cream, orange juice, sugar, butter or margarine, and baking powder, until smooth. Slowly add the flour to the blender, and continue to puree until the batter is smooth. Butter 8 individual ramekins. Pour batter halfway into the ramekins. Drop the cream cheese mixture by spoonfuls into each of the ramekins. Top each ramekin with the remaining butter. Refrigerate 8 hours or overnight. Preheat oven to 350 degrees. Remove ramekins from refrigerator and bake for 45 minutes. Top each souffle with blueberry sauce or fresh blueberries. The very creative cook can also top each souffle with a cantaloupe sailboat.
