Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 1/2 pounds sausage (see modification below for meatless dish)
3 cups buttermilk pancake mix
3 eggs
2 cups milk
1/3 cup oil
1 teaspoon vanilla
2 apples, peeled and sliced thinly
cinnamon and sugar to taste

Instructions:
Break up and brown sausage in skillet and drain. Mix pancake mix, eggs, milk, oil and vanilla together. Add sausage to mix. Pour evenly into two greased 7x11 casserole dishes. Layer apples on top and sprinkle with cinnamon sugar.

Bake in preheated 350 degree oven for 30 minutes. Let cool 10 minutes. Cut each dish into 8 squares. Serve with hot maple syrup just like a pancake.

Modified for meatless dish: Same as above except in place of sausage use 1/2 cup or more raisins and 1/2 cup or more chopped pecans or English walnuts. Pour batter in the casserole dish, evenly sprinkle with raisins and then chopped nuts. Layer on the thinly sliced apples and sprinkle with cinnamon sugar.Serves 8 (2 slices each)
