Cinnamon Mornings and Chocolate Dreams

Yield: 2 servings 

Ingredients:
Basic Frittata:
4 eggs, beaten with 2 tablespoons milk
1 tablespoon snipped chives
Salt and pepper to taste

Topping Choices, choose one grouping
1/4 cup chopped ham
1/4 cup cooked, chopped spinach, drained and pressed dry
1 to 4 tablespoons mozzarella cheese, shredded

or

1/2 cup baby broccoli florets, cooked and chopped fine
1/4 cup finely smoked turkey or ham
1 to 4 tablespoons gorgonzola cheese, cubed

Instructions:
Preheat the broiler, get out your omelet pan and assemble all your ingredients. These go together very quickly once everything is ready.

Heat an omelet pan and spray with light coating of vegetable spray. Pour in the basic egg mixture. Sprinkle your "signature topping" over the eggs, and allow to cook over medium heat, being careful not to burn it, until almost set. Then quickly place your omelet pan about 6 inches under the broiler heat until puffed and lightly browned. It doesn't take long so watch it carefully.

Serve right side up on a platter or cut into 1/2 to serve on individual plates. Garnish with lettuce, watercress, and seasonal, edible flowers.
