Yield: 3 servings 

Ingredients:
These are great together. Make Blueberry Sauce ahead and warm when serving. Sprinkle pancakes with powdered sugar.

Puffed Pancakes:
1 stick (1/4 pound) butter (melt this in glass pie plate)
2 eggs
1/2 cup milk
1/2 cup flour

Whisk these ingredients together and pour into the pie plate. Bake in a preheated 475 degree oven for about 15 minutes until browned and puffed on the sides.

Blueberry Sauce:
2 cups sugar
1 1/2 cups water
4 cups blueberries


Instructions:
Boil sugar and water for 10 minutes in large saucepan. Add blueberries and simmer for about 20 minutes, stirring occasionally.

When the puffed pancakes are baked, remove from oven and slice into 3 wedges. Put on breakfast plate, along with a little blueberry sauce. Sprinkle with powdered sugar. The combination on the crisp puffed pancake, blueberry sauce and powdered sugar is mouth watering!
