Cinnamon Mornings and Chocolate Dreams

Ingredients:
6 oz. cheddar cheese, grated
3 tablespoons flour
4 eggs, beaten
2/3 cup mayonnaise
1 package (10 oz.) frozen chopped spinach - thawed and drained
8 slices bacon, cooked and crumbled
4 oz. can chopped mushrooms, drained
1/2 teaspoon Greek all-purpose seasoning
2 tablespoons chopped black olives (optional)

Instructions:
Toss cheese with flour. Add remaining ingredients; mix well. Grease muffin tins well. Fill with mixture. Bake at 350 for 20 inutes or until set. Makes about 8-10 average size "muffins." You may want to substitute ham for the bacon and onion for the Mushrooms.

You may want to serve these muffin quiches with a wedge of cantaloupe, slices of kiwi, large strawberries, and a sprinkling of fresh blueberries. Cornbread and chive muffins, juice, coffee, and tea complete this delightful breakfast.
