Cinnamon Mornings and Chocolate Dreams

Ingredients:
In a large mixing bowl combine:
1 1/2 cups equal amounts of unbleached flour and whole wheat flour
1/2 cup oats
1/2 tsp. baking powder
1/2 tsp. baking soda

In a separate mixing bowl mash together with a whisk:
3 large ripe bananas (I find that thawed, formerly frozen, ripe bananas work really well)
3 tbsp. lemon juice
3/4 cup brown sugar
1/2 cup vegetable oil

Instructions:
Pour the banana mixture into the flour mixture bowl and stir gently until mixed then, with an ice cream scoop, fill 11 (or 12) if you'd like smaller muffins) oiled tin muffin cups. Bake in a 375 degree pre-heated oven for 20 minutes. Remove from oven and let cool a bit before removing muffins with a butter knife.
