 Lemon Cashew Bread Recipe

Yield: 1 loaves 

Ingredients:
Pastry:
1 1/2 cups all-purpose flour
3/4 cup sugar
2 tablespoons grated lemon rind
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted cashews, toasted and chopped
1/4 cup milk
1/4 cup fresh lemon juice
6 tablespoons vegetable oil
2 eggs

Glaze:
1/2 cup sugar
2 tablespoons lemon juice

Preheat oven to 350 degrees. Grease an 8 1/2x4-inch loaf pan.

Instructions:
In medium mixing bowl combine ingredients in order given. Pour into prepared pan and bake at 350 degrees for one hour. Cool 15 minutes.

Remove from pan. Poke holes in top of loaf with a toothpick. Mix sugar and lemon juice; brush over top and sides of loaf, with special attention to top. Let stand until glaze hardens before slicing.
