 Baked Eggs Santa Fe Style Recipe

Yield: 10 servings 

Ingredients:
10 eggs
1/2 cup flour
1/2 teaspoon salt
2 cups small curd cottage cheese
4 cups Monterey Jack cheese (grated)
1/4 pound butter
4 ounce diced, seeded green chilies (hot or mild to taste)
1/4 cup chopped red pimiento
8 ounce can whole corn (drained)
french fried onions (garnish)
Salsa, mild or hot (accompaniment)


Instructions:
Preheat oven to 350. Beat eggs until light. Add remaining ingredients except for onions and salsa; mix well. Pour into buttered individual small baking dishes. Bake in preheated oven 35 minutes. About 10 minutes before done, sprinkle onions on top of eggs, continue to bake until done. Serve immediately with salsa on the side.
