Ingredients: 1 1/3 cups cottage cheese
3 eggs lightly beaten
3 Tbsp. sugar
2 tsp. lemon juice
1 Tbsp. lemon zest
2 Tbsp. melted butter
6 Tbsp. milk
1 cup flour
1 tsp. baking powder
1 dash salt
Instructions: Mix first 7 ingredients until smooth, stir in last 3 ingredients until just blended. Add 1 or 2 more tablespoons of milk if necessary to make a thinner batter. Cook over medium heat. Do not cook with too high or heat or pancakes will toughen.
Serve with raspberry syrup, garnish with fresh raspberries, sprinkle with powdered sugar.
