Cinnamon Mornings and Chocolate Dreams

Ingredients:
7 eggs
2 cups milk
1 tsp. salt
dash pepper
1 cup grated sharp cheddar cheese
1 lb. Sausage (or substitute thinly sliced tomato or asparagus for vegetarian dish)
Herbes de Provence (rosemary, marjoram, thyme, sage, anise seed & savory)
Loaf white bread

Instructions:
1. Tear up 4 slices bread, place pieces in greased baking dish (13x9x2)
2. Brown and drain sausage. Drain off fat. Cut in slices and spoon over bread
3. Sprinkle with grated sharp cheese
4. Beat eggs together with milk, salt and pepper. Pour over mixture in baking dish.
5. Sprinkle generously Provence herbs over top
6. Bake in preheated 350 degree oven for 45 minutes. The cheese will rise to the top during baking.

Prepare the night before, cover and refrigerate.
