Ingredients: For one 8 ounce ramekin: 2 slices canadian bacon, cut into bite-size pieces 3 Tbs. corn oil 1/2 cup corn tortilla, cut into 1 1/2 inch pieces 2 Tbs. homemade salsa (or substitute La Victoria Salsa Supreme) 2 Tablespoons sour cream 1 egg 3-4 Tbs. grated cheddar cheese (sharp or medium) Spray the ramekin with vegetable cooking spray. Fry the corn tortillas in a couple tablespoons corn oil until soft and slightly golden. Instructions: Arrange a layer of canadian bacon in the bottom of the ramekin and top it with the tortillas. Spoon the salsa on top of the tortillas and sour cream on top of the salsa, making a slight well in the center. Break an egg into the well in the sour cream. Top with cheddar cheese. Bake the ramekin in the oven preheated to 350 degrees for 20-25 minutes, or until the egg is set and the cheese is bubbly. (Timing depends a lot on altitude, your oven and how many ramekins you have in the oven at one time. |
