Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
1 large egg
3/4 cup packed light brown sugar
1 cup ripe mashed bananas (2 large bananas)
Raisins
1/3 cup canola oil
1 teaspoon vanilla extract
1/3 cup applesauce, unsweetened
3/4 cup whole wheat flour
3/4 cup unbleached flour
1/2 cup oat bran (unprocessed wheat bran)
2 teaspoons baking powder
1/2 teaspoon baking soda (sieved)
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon salt (optional)
1/2 cup chopped walnuts for the top

Instructions:
Moist, light, and good for you!

Heat oven to 375º F. Grease muffin cups.
Beat egg and sugar in medium sized bowl. When smooth, beat in bananas, raisins, oil, vanilla and applesauce. Let stand a minute.

Thoroughly mix flours, bran, baking powder, baking soda, cinnamon, cloves and salt in a large bowl.
Fold in banana mixture with spatula just until moistened. Sprinkle with chopped walnuts. Spoon batter into muffin cups. Bake 15 to 25 minutes or until brown and springy to the touch in the center. Cool on rack.
