Ingredients: 1 can evaporated milk
1/2 cup skim milk
1 large ripe banana
4 eggs
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
6-8 slices wheat bread
Instructions:
Preheat oven to 400. In food processor, or blender, combine milk, banana, eggs, and spices. Process on and off until smooth. At this point, it can be place in refrigerator for up to 24 hours. To proceed, pour batter in a large bowl. Grease a large baking pan or several small pans. Dip wheat bread in a banana mixture until very moist, but not falling apart. Place slices in pan and bake 10-15 on each side. Remove from pan, place on platter, sprinkle with powdered sugar or drizzle with blueberry sauce.
