Ingredients: 1 1/2 - 2 cups raisins 1 cup apple juice 1 15 oz. can pumpkin 3 eggs 1/4 cup canola oil 3/4 whole wheat flour 3/4 cup wheat germ 3 teaspoons baking powder 1 teaspoon cinnamon Instructions: Blend raisins, apple juice & pumpkin in blender till smooth. Gradually add eggs & oil & blend. In separate bowl sift together flour, wheat germ, baking powder & cinnamon. Pour in blended mixture. Mix till all moist. Spoon batter into greased tins. Cook 20 minutes (more or less depending on size of muffins or loaves)in preheated oven at 375 degrees. |
