 Totally Orange Muffins Recipe

Yield: 1 dozen 

Ingredients:
1 1/2 cups flour
3/4 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 orange
1/3 cup orange juice
6 Tbsp. butter
1 egg
1/2 cup raisins

Instructions:

Preheat oven to 400 degrees. Grease and flour muffin cups. Combine first five ingredients. Grate rind from orange. Discard pith, quarter and seed orange. In food processor or blender, mix rind, orage, orange juice, butter and egg. Stir into flour mixture just until moistened. Add raisins. Divide batter evenly into muffin cups. Bake 15-20 minutes.
