Cinnamon Mornings and Chocolate Dreams

Yield: 4 dozen 

Ingredients:
2 cups all purpose flour
2 cups whole wheat flour
3/4 cup brown sugar
3/4 cup white sugar
4 tsp. baking soda
1 tsp. salt
4 tsp. ground cinnamon
1 Tbsp. grated orange rind
1 cup buttermilk
3 cups shredded apple
3 cups shredded carrots
1 and 1/2 cups shredded coconut
1 cup chopped dates
1 cup chopped nuts
1 cup oil
6 beaten eggs
2 tsp. vanilla


Instructions:
Combine eggs, oil, buttermilk, brown and white sugar and vanilla. Sift all dry ingredients together and slowly add to the egg mixture. Stir in apple, coconut, dates, carrots, nuts and orange rind. Stir until just mixed. Spoon batter into muffin tins that have been greased. Bake at 375 degrees for 15-20 minutes.
