Ingredients: 1 1/4 lb. skinless, boneless chicken breast halves
1 egg
3/4 t salt
1/4 t pepper
Enough flour to coat the chicken
3/4 cup bread crumbs
1/4 cup oil
6 garlic clove halves
Chopped basil and Italian Parsley
Squeeze of lemon
Instructions: Gently pound the chicken breast halves to even thickness. Beat egg with salt and pepper. Coat chicken with flour, dip in egg, then coat with bread crumbs. Heat oil with garlic cloves in skillet over medium-high heat. Cook chicken in batches 5-8 minutes, turning once, until golden and cooked through: discard garlic. Serve sprinkled with chopped basil and Italian parsley and a squeeze of lemon.
