Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 lb. sweet or mild Italian bulk sausage
1/4 cup diced green pepper
1/4 cup diced red pepper
1/4 cup diced onion
1/3 cup diced apple with skin on
6 eggs
1-1/2 cups shredded cheddar or swiss cheese
8 large round fajita or soft burrito shells
Fresh or jar salsa to taste
Sour cream if desired

Instructions:
Cook ground sausage over medium heat in skillet until no longer pink. Drain and set aside.

Saute green and red peppers, onion and apple in skillet over medium heat (use about a tsp. of oil) until they turn slightly translucent (about 6-8 minutes). Remove from heat and set aside.

Scramble eggs with whisk and cook lightly over medium heat in same skillet. Remove from heat and set aside.

Assemble fajitas by placing equal amounts of cooked sausage and scrambled eggs in a narrow row on one end. Sprinkle with peppers, onions and apple mixture as well as shredded cheese. Begin rolling tightly from the filled end working away from yourself. Stuff ends with extras.

Lay on foil covered cookie sheet with seam side down. Sprinkle with pinch of shredded cheese and broil on low until cheese bubbles and fajitas turn a light golden brown.

Top with salsa and serve with sour cream if desired.
