Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 large egg
1/4 cup vegetable oil
3/4 cup white chocolate liquor
1/2 cup milk
1/2 tsp almond extract
2 cps flour
1/4 cup sugar
2 Tbsp baking powder
1/3 cup grated white chocolate
1/4 cup toasted almonds
12 one-half-inch chunks of white chocolate

Instructions:
Preheat oven to 325 degrees and grease muffin tins. Combine first 5 ingredients and mix well. Combine remaining ingredients, except the white chocolate chunks, in large bowl and mix well. Make a well in the center and add the wet ingredients. Stir just enough to blend. Fill muffin pans half full. Add one chocolate chunk to each muffin. Add more batter to fill pans 3/4 full. Bake in oven about 15 minutes, or until a toothpick inserted into center comes out dry.
