Ingredients: 1 cup unbleached flour 1 cup whole wheat flour 1/3 cup sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 6 Tbsp chilled, unsalted butter, cut into pieces 2/3 cup lowfat, or nonfat, buttermilk 2 large eggs, or egg substitute 1 1/2 tsp vanilla extract Instructions: Preheat oven to 350 degrees. Spray large cookie sheet. Mix first 5 ingredients in large bowl. Add butter and rub with fingertips, or pastry blender until mixture resembles fine meal. Whisk buttermilk, eggs and vanilla together. Gradually add to flour and stir until moist clumps form. Turn out on floured surface and knead to blend. Transfer to prepared cookie sheet. Press into 8" round, and score with sharp knife into 8 wedges. Bake until golden, about 25-30 minutes. Cool slightly, recut wedges and serve at once. |
