Ingredients: Sugar & Spice Mixture:
1/2 pound light brown sugar
1/2 pound dark brown sugar
2 teaspoons cinnamon
1 whole nutmeg, freshly grated
1/2 - 1 cup coarsely chopped pecans
Instructions: Mix sugars, spices and nuts very thoroughly. Store in an air-tight container in dry place.
Core and peel apples. Place each apple in an individual microwaveable ramekin. Lightly pack about a heaping tablespoon of sugar mixture in each apple's center and sprinkle some on the top and sides. Cover with microwavable plastic wrap.
Cooking time will depend on the number of apples you are cooking and the wattage of your microwave.
1 apple: 6-6 1/2 minutes
2 apples: 7 minutes
4 apples: 8 minutes
