 Gingerbread Muffins Recipe

Ingredients:
4 lbs. butter
4 lbs. sugar
16 eggs
6 lbs. flour
2-1/2 oz. soda
1-1/2 oz. salt
1/2 oz. ginger
3/4 oz. cinnamon
7 cups boiling water
7 cups molasses





Instructions:
Blend butter and sugar; add eggs. Combine remaining dry ingredients and add to previous mixture. Combine water and molasses, mix into batter completely. Refrigerate as batter is easier to work with when cold. Bake at 400 degrees for 12-15 minutes.
