Ingredients: 1 cup butter, softened
3/4 cup sugar
1/2 tsp. rum extract
1/4 tsp. salt
1 cup coconut
2 1/2 cups flour
1/4 tsp. fresh grated nutmeg
Variety of jam for filling
Instructions: Cream butter and sugar until fluffy. Add coconut and rum extract. Add flour, salt and nutmeg and blend until just smooth. Refrigerate dough for 30 minutes.
Preheat oven to 350 degrees. Place small scoops of dough onto ungreased baking sheet. Make a small indentation in top of each cookie with floured index finger. Fill indentation with about 1/4 tsp. jam or preserves. Bake at 350 for about 15 minutes or until edges of cookies are light brown. Cool on racks. Keep tightly covered.
Makes 50-60 small cookies.
