Ingredients: 1/2 stick butter or margarine 1 cup lard or vegetable shortening 1 1/2 cups sugar 2 eggs 2 Tbsp black walnut extract (for real) 3 3/4 cups flour 2 1/2 tsp baking soda 3/4 tsp salt 80 large pieces of black walnuts or more small pieces Instructions: Preheat oven to 350 degrees. Cream butter, lard, and sugar until fluffy. Add eggs and black walnut extract and continue beating until smooth. Sift flour, baking soda, and salt together. Stir into butter mixture. Knead a bit with your hands to make stiff, smooth dough. Use a small ice cream scoop to place balls of dough 2 inches apart on a greased baking sheet. Flatten with the palm of your hand and place a one large or several small pieces of black walnut on each cookie. Bake 10-12 minutes, until lightly browned on bottom, But pale on top. Cool on racks. |
