Cinnamon Mornings and Chocolate Dreams

Yield: 2 dozen 

Ingredients:
1 1/2 cups flour
4 tablespoons powder sugar
2 1/4 cups sugar
1 tablespoon vanilla
4 tablespoons flour
3/4 cup butter (cut in pieces)
5 large stalks rhubarb (about 3 cups diced)
4 eggs
1/4 teaspoon salt

Instructions:
Heat oven to 350 degrees. Grease an 11" x 15" baking pan or casserole. In food processor, process flour, powdered sugar and butter until it starts to come together - approximately 1 minute. Press into bottom of pan and bake for 20 minutes. Dice rhubarb. Process sugar, eggs, vanilla and salt until thick. Add flour and process 10 seconds. Stir into rhubarb and spread over crust. Bake until top is brown and firm - 35 minutes. Cool completely before serving. Cut into squares.
