Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
3/4 cup butter, softened
1 cup sugar
2 eggs
3 very ripe bananas, mashed
2 cups all-purpose flour
1/3 cup cocoa powder
1 teaspoon vanilla
1 teaspoon baking soda, dissolved in 1/4 cup warm water
1 cup chopped pecans

Instructions:
Grease and flour 9x5" loaf pan. Preheat oven to 350 degrees. Cream butter in medium bowl; add sugar gradually until light and fluffy. Add eggs one at a time, beating well after each is added. Stir in bananas and beat well. Mix in one cup flour until blended, then add the other cup of flour. Beat in cocoa, vanilla and baking soda/water just until blended. Stir in nuts. Pour into loaf pan and bake about 70 minutes. Cool. Remove from pan and wrap well. Store at room temperature or refrigerate. Also freezes well.
