Cinnamon Mornings and Chocolate Dreams

Ingredients: 1/2 cup shortening 1/2 cup margarine 1 cup white sugar 1/2 cup brown sugar 1 egg, beaten 1 1/2 cups flour 1 tsp. baking soda 1 tsp. cinnamon 1 1/2 cups rolled oats 1 tsp. vanilla 3/4 cup coconut 3/4 cup walnuts Instructions: Cream shortening, margarine, sugars. Add beaten egg until smooth. Add flour, soda and cinnamon. Mix. Add oats, vanilla, coconut and nuts. Mix. Chill for 1 hour. Roll into walnut size pieces and place on greased cookie sheet. Rub a little margarine on the bottom of a glass, dip the glass in sugar and use to slightly flatten the cookies. Repeat for each cookie. Bake at 350 degrees for 10-12 minutes or until slightly browned. Options: You can omit the walnuts or replace them with raisins, dried cranberries or a combination of nuts and berries. |
