Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
4 bananas
1/2 cup brown sugar
1/2 cup orange juice
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 cup rum
1 tbsp. melted butter
2 pieces white bread, toasted, buttered and sprinkled with cinnamon sugar, then dice very small

Instructions:
Peel each banana and cut in half lengthwise to lie flat in oblong single serving dishes. Combine remaining ingredients except bread and pour over bananas. Bake in 350 degree oven for 10-15 minutes being careful not to overcook and basting several times. A quick version of this is to use the microwave on high for two or three minutes, turning often. The bananas should be warmed through but not cooked until they become translucent. Top with warm croutons and a few dries cranberries which have been chopped very fine.
