Cinnamon Mornings and Chocolate Dreams

Ingredients:
3 granny smith apples, peeled, cored and sliced thick
7 egg whites, beaten
4 egg yolk
1 cup of flour
1 cup of milk
1/4 cup of Cavados (apple brandy)
1/4 teaspoon orange essence, or 1 teaspoon triple sec
about 1/2 cup of golden raisins soaked in Grand Marnier
about 1/2 cup of chopped bananas
about 1/2 cup toasted pecans

Instructions:
Mix milk, egg yolks and flour together in a large bowl. Season with a dash of salt, a teaspoon or so of vanilla and a teaspoon or so of orange essence and if desired a dash or more of cinnamon.

Set aside this mixture to soak. Using a high sided skillet, saute the apples in a small amount of unsalted butter and if you wish a bit of virgin olive oil. Add some apple brandy if you wish (cook for about one minute to evaporate the alcohol). Add a bit of sugar. Beat egg whites until stiff, (soft peaks). Fold into the milk-flour-egg yolk mixture, one half at a time. Pour into the high sided skillet you have sauted the apples in. Add the raisins, bananas, and pecans. Or you can add the bananas, raisins and pecans may be added first, pouring the batter over them.

Bake in a 375 degree oven for about 30 minutes or until done. Serve at once.
