Ingredients: 1/4 cup canola oil 1 1/4 cup sugar (or sugar substitute - equal, sweet n low, etc.) 4 egg whites 1 cup all purpose flour 1/2 tsp baking powder 1/4 tsp salt (salt substitute) 2/3 cup unsweetened cocoa 1 1/2 teaspoons vanilla extract vegetable cooking spray 1/4 cup no sugar added prickly pear marmalade 2 tablespoons finely chopped walnuts Instructions: Combine oil and sugar in a medium bowl, beating well with an electric mixer on medium speed. Add egg whites; beat well. Combine flour and next 3 ingredients; add to sugar mixture, beating well. Stir in vanilla. Coat a 9" square baking pan with cooking spray and pour in batter. Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Spread with prickley pear cactus marmalade; sprinkle with nuts. Cool completely. Yield: 2 dozen brownies when cut into 2" x 1 1/2" bars - size allows for some shrinkage in pan (about 100 calories per bar). Approximate calories from approximate fat 25-27 %.
