Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
To make 8 coddled egg custards:

5-6 medium eggs - beaten
1/2 tsp cinnamon
2-3 Tbls vanilla - more to taste
1/8 cup sugar
1/2 cup maple syrup
1 cup half & half plus milk to fill the quart jar

Instructions:
I use a quart Mason jar to combine all ingredients and shake vigorously.

Pour into prepared egg coddlers and twist on lids. If you spray the inside of the coddler with a nonstick spray, they will be easier to clean up later. Adding three or four raisins to the bottom of the coddler is a nice little surprise when guests reach the bottom of the custard.

Place in a large pot and fill it with water to about 3/4 of the way up the sides of the coddlers.

Once the water boils, time at least 10 minute for the small size coddlers and 15 minutes for the double size coddlers. This will ensure all eight coddlers will be cooked through . Less time is needed for fewer coddlers in the pot.

Five minutes will give the equivalent of a three minute egg if you are trying a regular egg breakfast with the small coddlers.
