Ingredients: 3 cups packed brown sugar 1 cup corn oil 2 eggs 1-1/2 tsps. vanilla 1-1/2 tsps baking soda 1-1/2 tsps salt 4-1/2 cups flour 2-1/2 cups rhubarb Instructions: This recipe comes from "Recipes from Our Bread Basket," published by the Settlers Inn at Bingham Park, Hawley, PA. The collection is available for $3.50 from The Settlers Inn at Bingham Park. Springtime gives us this unusual bread that we find very appealing. With its tart sweet flavor, we like serving it with strawberry cream cheese. Blend the oil and sugar. Add the eggs and vanilla mixing until creamy. Sift the dry ingredients and stir into the sugar mix until blended. Fold in the rhubarb and divide between 2 greased loaf pans. Bake (350 degrees)for about 45 minutes to an hour, or until a tester comes out clean. NOTE: If using frozen rhubarb, thaw and increase flour to 5 cups. Use the rhubarb liquid. Notes: Spring |
