Ingredients: 12 oz small-curd cottage cheese 1 cup butter, softened at room temperature 1 tsp almond extract 2 cups flour 1/2 cup sugar Glaze: 1 cup powdered sugar 1/2 tsp almond extract 2-3 tsp warm milk Slivered almonds Instructions: With an electric mixer, combine the cottage cheese, butter, extract, flour and sugar. Form into 3 balls and refrigerate at least 6 hours. On a floured board, roll each ball into a circle 1/8 inch thick. Cut each circle into 4 pie-shaped wedges. Roll each wedge croissant style, starting with the wide end. Place on an ungreased cookie sheet, brush with whipped egg white and sprinkle with almonds. Bake at 350 for 20 minutes. When cool, drizzle with glaze mixture. |
