Ingredients: 3/4 cup milk 2 Tbsp. butter, melted 1 egg 1 cup flour 2 Tsp. baking powder 3 Tbsp. sugar 1/2 Tsp. salt 1/2 cup toasted, chopped black walnuts (see note) 1 medium, Ripe Banana, peeled and sliced 1/2-inch thick Oil Instructions: Beat together milk, melted butter and egg in medium bowl. Stir together flour, baking powder, sugar and salt in separate bowl. Stir into milk mixture just to mix. Stir in nuts and banana. Lightly oil pancake griddle. Heat over medium heat 1 to 2 minutes. Pour out batter for 4 pancakes. Cook until top side has air bubbles and underside is golden, 3 to 5 minutes. Flip pancakesover and cook second side, 1 to 2 minutes longer. Serve with maple syrup. NOTE: To toast walnuts, place on baking sheet and bake at 350 degrees until lightly browned and aromatic, about 5 minutes. Immediately remove from oven and from cookie sheet. |
