 Chocolate Biscotti Crunch Cookies Recipe

Yield: 2 dozen 

Ingredients:
1 cup butter
1 3/4 cups sugar
1 cup cottage cheese
1 teaspoon vanilla extract
2 eggs
2 1/2 cups flour
1/2 cup cocoa
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups crumbled plain biscotti

Instructions:
Preheat oven to 350 degrees. Cream butter and sugar until fluffy. Add cottage cheese and vanilla and beat well. Add eggs, one at a time, beating well after each addition. Mix together flour, cocoa, soda, baking powder and salt. Gradually add to creamed mixture, mixing well. Fold in biscotti crumbs. Drop by rounded teaspoonfuls onto ungreased cookie sheet and bake for 15 minutes. Let stand a few minutes before removing to rack to cool.
