Ingredients: 2 cups unsifted all-purpose flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp ground nutmeg 1/4 tsp salt 1 cup blueberries 1/2 cup stick of margarine 1/3 cup of honey 1/3 cup of milk 1 egg Instructions: Heat oven to 400 degrees. Grease twelve 2 3/4-inch muffin cups and set aside. In large bowl, combine all dry ingredients. Stir in blueberries until coated with mixture; set aside. In a small saucepan, melt margarine over low heat. Remove from heat and stir in honey until well mixed. Stir in milk and egg until blended. Stir margarine mixture into flour-berry mixture just until dry ingredients are moistened. Divide batter evenly among muffin-pan cups. Bake 15 to 18 minutes. |
